Deodorising

The deodorising phase of edible oils, whether continuous or semi-continuous deodorising, is a process that follows the bleaching. This step is of high value, both technically and organoleptically, with a fundamental importance in terms of compliance. Indeed, deodorisation is essential to stabilise edible oils from a chemical point of view, but it is also essential because free fatty acids are removed, so the deodorised oil has bland taste and is odourless. Therefore, deodorisation is a crucial step for the marketability of edible oils.

Basically, deodorising of edible oils involves 4 stages:

  • Heating: the oil is brought to the final deodorising temperature, which allows the volatile elements to be removed.
  • Vacuum: a deep vacuum is created with a proper vacuum system to reduce the boiling point and prevent oxidation of the product.
  • Steam stripping: superheated dry steam is injected to strip volatile components.
  • Cooling: after deodorising, the oil is rapidly cooled under vacuum to ensure stability.

Depending on the production needs, companies use continuous deodorising or semi-continuous deodorising.

It all depends on the type and quantity of edible oils to be processed.

If only one type of edible oil needs to be refined at a time, in large quantities, continuous deodorising is considered the most commonly adopted process.

Semi-continuous deodorising is, instead, an ideal process for companies that need to process multiple types of edible vegetable oils in varying quantities. Semi-continuous deodorisation is a batch system: each batch is processed in each tray of the deodoriser, where the tower consists of several compartments or trays. These compartments enable sequential deodorisation, improving efficiency and reducing contamination between batches.

TECHNOLOGY ADVANTAGES

Whether it is continuous deodorising or semi-continuous deodorising of edible oils, both types of deodorisation are processes that significantly improve the quality of crude oils, making them much more stable, pleasant and compliant with market standards for their organoleptic properties, but also meeting the requirements of international regulations. In this way, the best possible results can be achieved from both soft oils (such as soybean, canola, sunflower and others) and hard oils (such as palm oil or coconut oil).

The quality of the end products is highly depending on how the process is carried out, regardless of whether it is continuous or semi-continuous. In terms of cost-effectiveness, however, continuous deodorising systems have simpler handling and lower energy consumption than semi-continuous deodorising.

In general, we could list the main advantages attributable to both technologies as follows:

  • Ability to process crude oils with high FFA, as high as 6%
  • Ability to obtain high purity FAD via enrichment section
  • Resolution to prevent and mitigate 3-MCPD & GE
  • Ability to achieve low Trans Fatty Acid (TFA) limits during processing
  • Meet market requirements for colour, taste, and odour
  • Long shell life, stability and oxidative achievement for refined oil
